Homestead Journal

From the Field

The Table Greens blog documents how we are building a 20+ acre regenerative homestead: a backyard aquaponics system, rotational grazing on small acreage and a cold storage and dry-aging room, with real build costs and the mistakes we made along the way.

Questions Our Guides Answer

How do I start a backyard aquaponics system?

Start with a media bed system, the most forgiving type, and cycle it for 4-6 weeks before adding fish so bacteria can convert ammonia to nitrate. Begin with tilapia, which tolerate beginner mistakes, keep pH at 6.8-7.2 and stock about 1 lb of fish per 5-10 gallons. Our first system cost about $1,390. What is rotational grazing on small acreage?

Rotational grazing moves animals through fenced paddocks so each one rests and regrows. On our roughly 4 acres of pasture we run three paddocks of 1.2-1.5 acres, move cattle and goats every 7-10 days in peak season, follow them with chickens 3-5 days later to break parasite cycles, and rest each paddock 60-80 days. How much does a homestead cold storage room cost?

Our earth-sheltered cold storage room with three temperature zones, a dry-aging chamber, refrigerated storage and a root cellar and canning room, cost about $12,870 to build, including $4,200 of concrete and $2,100 for three used walk-in cooler doors. It took 8 months to design and build. Read Building Our Cold Storage Room for Dry-Aged Meats and Canning.

How long should beef be dry-aged?

In our dry-aging chamber, held at 34-38°F and about 80% relative humidity with constant airflow, 21-28 days is the sweet spot for most beef, 35-45 days gives a more complex, nutty flavor that we prefer for ribeyes, and 60+ days is intense. Only whole primal cuts should be dry-aged, never ground meat or pre-cut steaks. Our cold storage post covers the full setup.

How much rest does a pasture paddock need?

Extension guidance from Victor Shelton, an NRCS grazing specialist writing for Ohio State University Extension, is never less than 14 days of rest in fast spring growth, at least 30 days once growth slows, and often 45 to 60 days for cool-season grasses in summer heat. Start grazing tall cool-season forages at 8 to 12 inches and stop at 4 to 6 inches. Our grazing guide compares those figures with the 60-80 day rest we use on our own paddocks.

How do you size an aquaponics system to the fish?

Size it by daily fish feed. SRAC Publication 454 from the Southern Regional Aquaculture Center recommends 60 to 100 grams of feed per square meter of raft growing area per day, low for small lettuce and high for larger plants such as romaine. It also recommends keeping pH near 7.0 as a compromise between nitrifying bacteria and plant nutrient uptake, and notes that potassium, calcium and iron usually need supplementing. Our aquaponics guide walks through it.

How much weight does beef lose when it is dry-aged?

In a South Dakota State University Extension study, beef sides aged at about 37 degrees F and 80 percent humidity lost 2.7 percent of their weight in 7 days, 3.8 percent in 14 days and 4.9 percent in 21 days, or 16 to 23 pounds per side, with most of the loss in the first few days. That shrink is the real cost of longer aging, and our cold storage post explains how humidity and airflow change it.
